Preheat oven to 425°F (220°C). Line a baking sheet with foil and place an oven-safe wire rack on top. Pat chicken wings completely dry.

Toss wings with baking powder and salt until evenly coated.

Arrange wings in a single layer on the wire rack. Bake 25 minutes, flip, then bake another 20-25 minutes until golden and crispy.

While wings bake, combine honey, sriracha, soy sauce, rice vinegar, sesame oil, garlic, and ginger in a small saucepan. Simmer over medium heat, reduce to low and bubble for 5-7 minutes until thickened.

Transfer cooked wings to a clean bowl. Pour warm sauce over wings and toss to coat.

Place coated wings on serving platter, garnish with toasted sesame seeds and sliced scallions. Serve immediately.
