Brown the ground beef over medium-high heat in a large Dutch oven or heavy-bottomed pot until fully browned. Drain excess grease.

Add diced onion and bell pepper to the pot and cook for 5-7 minutes until softened. Add minced garlic and cook 1 minute until fragrant.

Stir in chili powder, cumin, smoked paprika, oregano, and cayenne pepper. Cook 1 minute to toast spices.

Pour in crushed and diced tomatoes with juices. Season with salt and black pepper. Bring to a boil, then reduce heat, cover, and simmer for at least 1 hour, stirring occasionally.

Uncover and stir in kidney beans, pinto beans, and black beans. Continue to simmer 10-15 minutes until beans are heated and flavors meld.
