Pat salmon fillets dry with paper towel and season both sides with salt and pepper.
Heat olive oil in a skillet over medium-high heat. Place salmon skin-side down, press gently for 10 seconds, and cook 4-6 minutes until skin is golden and crispy.
Flip salmon and cook 2-4 minutes on the other side until desired doneness. Remove and set aside.
Reduce heat to medium. Add 1 tbsp butter and minced garlic, cooking for 1 minute until fragrant.
Deglaze pan with white wine or broth, scraping up browned bits. Simmer until reduced by half.
