Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
Season chicken cutlets with salt, pepper, and 1/2 teaspoon of Italian seasoning. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 3–4 minutes per side, or until golden brown and cooked through. Remove chicken from skillet and set aside.
Reduce heat to medium. Add minced garlic to the same skillet and sauté for 1 minute until fragrant, being careful not to burn it.
Pour in the chicken broth, scraping up any browned bits from the bottom. Bring to a simmer. Stir in heavy cream and remaining 1/2 teaspoon Italian seasoning. Simmer for 3–5 minutes until slightly thickened.
Remove from heat. Stir in Parmesan cheese, parsley, and chives. Add cooked pasta and toss to coat. Add a splash of reserved pasta water if needed to adjust consistency.
Slice chicken and add it back to the pasta. Adjust seasoning with salt and pepper. Serve immediately with extra Parmesan and herbs.
